Boletus Edulis, Boletus Aereus, Boletus Pinicola
King Bolete, Penny Bun or Porcini
- Conventional, wild and organic
Boletus is a very popular, delicious and meaty mushroom with a large, edible fruiting body. It is considered one of the safest wild mushrooms to pick for the table, as no poisonous species closely resemble it. Mushrooms can be found under coniferous trees in pristine non-polluted Serbian regions, generally in summer and autumn. Boletus is considered to be an ecologically healthy food, rich in nutrients and other substances specific to that kind of food. The mushroom is low in fat and digestible carbohydrates, and high in protein, vitamins, minerals and dietary fibre.
The process of boletus freezing is very modern and its classification is done by qualified personnel. Frozen boletus is sorted according to its thickness, colour and appearance into three different quality classes. Dry boletus is a well cleaned fresh boletus, cut and then dried either in a special drier or in the sun, followed by sorting according to its quality to the different quality classes.
Golden chanterelle or Girolle
- Conventional and organic
Rich in flavour, with a distinctive taste and aroma. Some species have a fruity odour, others a woodier, earthy fragrance and some can even be considered spicy. The golden chanterelle is perhaps the most sought-after and flavoursome chanterelle and is considered an excellent edible mushroom.
We purchase the golden chanterelle from the local mushroom pickers who collect them from the pristine forests away from any industrial impact. Chanterelles are well-suited for drying and tend to maintain their aroma and consistency quite well. Dry chanterelle is a well cleaned fresh chanterelle, cut and dried either in a drier or in the sun. After drying, it is checked and graded into 3 classes depending on colour and size. Dried chanterelles can also be crushed into flour and used in seasoning in soups or sauces. Chanterelles are also suitable for freezing. Before freezing and packaging, all mechanical impurities are removed, then the mushrooms are sorted according to their size and customers’ requirements.
